Broccoli pasta is a tubular pasta, with ridges, and usually two full twists.
Broccoli pasta became popular in the 1920's. Invented and named by Stephano Pughli, a 14 year old boy from Venice, broccoli emerged as a response to the unpopular government program at the time, "Mangiare le Vostre Verdure", which literally meant "Eat Your Vegetables".
When asked by their parents if they were, in fact, eating their vegetables while visiting friends, Italian, and later American youth would always answer "we ate the broccoli". Knowing giggles from the young boys usually accompanied this enthusiastic answer.
Parents were generally satisfied that their children were complying with the vegetable-eating law. It wasn't until 1952 when, at the annual International Parents Symposium XXI, Lake Como, parents from both continents accidentally discovered the true meaning of 'broccoli'. The gig was up. Furor over broccoli pasta ensued. Broccoli pasta was banned by Papal Edict on March 12th 1952. It wasn't until the famous "Broccoli Pasta Est Bon Por Lo Bambino" Papal Bull of 1968 that the ban on broccoli pasta was finally lifted.
Cook for 11 minutes al dente, 13 minutes until done.
