What started out as a tradition in 15th century Italy has now become delightful pasta for all to enjoy. In late fall, hunters in the town of Loreto in the Marche region of central Italy would venture into the laurel forests in search of moufflon (wild sheep). If the hunt was successful, the leader of the hunters could be heard heartily playing his Fisarmoniche (squeeze-box or accordion in English) during the journey home. This was the signal to the villagers that, indeed, the hunt was successful. Loretian wives were known for their event planning creativity. In 1421, Liza Timmermani, one of the wives of Petingo Timmermani, conjured up a pasta shape that resembled the instrument they so enjoyed. Ever since that date, Loretian wives, overwrought with joy, lovingly prepare Fisarmoniche to celebrate this bounty from the land. We can all thank Liza for Fisarmoniche, the festive pasta.
For “al dente”, boil uncovered, stirring occasionally for 10 minutes. For a more tender texture, boil an additional 1 minute. Accompany with lamb, fresh spring vegetables, Tuscan Chianti wine and some Anthony Galla-Rini music.
