The Scoop: Never buy "Pure" Olive Oil, or "Virgin" Olive Oil, or anything that just says "Olive Oil". Please, please please make sure it says "Extra Virgin" Olive Oil. Why? When olives are pressed cold, and the First Pressing oil comes out, the Extra Virgin. The Good Stuff. After this first pressing, what is left over, the pumice, still has some oil in it. So it is pressed again, or solvent extracted, to yield Pure or Virgin Olive Oil. This oil doesn't taste as good, isn't as good for you, and is cheap, cheap, cheap. Why? When you press the **** out of the oil, other things come out of the pit and the skin, generally imparting a not-so-great flavor to the oil. What you want is what comes out of the fruit the first time. That's where all the good stuff is. That is the "Extra Virgin". Now you know the rest of the story...
