Tortellini Pasta

This is classic tortellini, with cheese.

Roman pasta makers, fed up with the harsh 16th century ravioli restrictions of Milano and Siena, invented the tortellini. Filled with cheese, the tortellini threatened the ravioli monopoly.

A messenger from the ravioli cartel of Milano, on his way to the Pope with orders to arrest anyone caught making or eating tortellini, was intercepted at the Rialto river. "Our die is cast" uttered General Pietro Timmermani as he was killed by the tortellini radicals.

And so, we have tortellini, the most exciting pasta shape ever.

Cook for 16 minutes.
