More precisely, curds are the first step in cheese production. Once the milk has been warmed, rennet or acid is added to the milk, causing the milk to separate into curds and whey. Curds are the protein from milk. They are firm, slightly salty (as I have said) and just delicious.
Besides selling the curds as such, Keith also uses them to make his famous Cheddar and Blue cheeses. But I just love to snack on the curds as-is!
Curds can be used in salads, with fruit, in the way you would use cottage cheese.
